Food suggestions for twin toddlers

    Another easy one ...

    take some ground beef (or other ground meat), possibly an onion or another veggie (if you like), add a can of diced tomatoes. Then put this content on a soft fajita, roll, put in a baking tray side by side, cover with cheese and put it in the oven until the cheese is nicely melted.

    Easy and quick and pretty healthy.

    I have a book that details the Super Baby Food diet and we steam, puree, and freeze, in ice cube trays, everything and mix it in with whatever is for dinner. It's great. I always know they are getting all of the vegis that they nee. I can even add garlic!

    They also LOVE small pieces of tortilla with beans, rice and cheese all melty and squishy inside!

    My girls love:

    chunks of banana rolled in crushed up rice crispies
    frozen mixed veggies (w/o the green beans & I just put them in a collander in the sink to defrost)
    ditalini pasta with a little evoo and cheese
    cubed butternut squash or mashed up & mixed with mac & cheese
    banana pancakes
    string cheese cut into little pieces
    frozen fruit cut into bite size pieces
    grilled cheese
    mini bagels cut cut or torn into little pieces


    But I am lucky because the only things they haven't really liked were eggs and cottage cheese!

    We have a few new hits here:

    Hummus sandwiches (takes 10 seconds to make)
    Almond butter sandwiches (it's much easier to spread than peanut butter) - also takes 10 seconds
    ANY green vegetable with olive oil and basil on it (including oakra and broccoli!)
    Acorn squash with olive oil and cinnamon
    Banana bread!!!!! (I make it with whole wheat flour and honey --- no sugar). It's delicious!

    My girls are picky eaters but here are a few things they really like -

    Vans frozen waffles

    Little pizzas - Thomas English Muffins, Ragu pizza sauce, shredded mozzerella cheese, bake at 350 for 15 mins

    Homemade chicken nuggets - chicken breast cut into nugget sized pieces, dipped in milk, coated in crushed corn flakes and lightly seasoned, baked at 400 for 20-25 mins

    Hot dogs

    Mac n cheese

    Yogurt, including Fage which is very high in protein

    Mini meatballs - ground beef, applesauce, parm cheese, garlic, crushed corn flakes, baked at 400 for 20-25 mins

    Allouette garlic and herb spread on crackers

    Del Monte canned green beans

    Any type of fruit

    Pasta with butter

    Sour cream applesauce cake -

    My dd is allergic to eggs so this is all eggless stuff.

    From Paula Deen for Kids Friendly Food

    Cheesy Ranch Hash-Brown Potatoes (makes 6 to 8 servings)

    2 cups shreeded sharp cheeddar cheese, divided
    1 (8-ounce) package cream cheese, softened
    1 cup sour cream
    1/4 cup butter, melted
    1 (1-ounce) package dry ranch salad dressing mix
    8 slices bacon, cooked and crumbled
    1 (30-ounce) package frozen country-style hash-brown potatotes, thawed

    Preheat oven 350, lightly grease a 1-1/2 quart baking dish.

    In a medium bowl, combine 1 cup cheddar cheese, cream cheese, sour cream, butter, dressing mix, and bacon. Add hasb browns, stirring to combine. Spoon mixture into prepared baking dish.

    Bake 30 minutes; sprinkle with remaining cheese. Bake 10 minutes more, or until hot and bubbly

    This one is easy...

    Black bean & cheese quesadillas (sp?)

    Take tortilla shell, put it on cookie sheet.
    Spread with black beans.
    Shred tons of cheese on top.
    I throw on some green onions too.
    Bake in the oven at 350 degrees.
    When it's close to done (cheese is melted) throw the second tortilla on top to cover.
    Let the top tortilla get nice and warm.
    Take it out of the oven, cut up, let it cool, and serve.

    Also a tip... Since my girls were 6mos. they've all loved to eat black beans straight out of the can. Just rinse them first.

    Beans are an excellent source of protein.

    I got this off of a box of Hodgson Mills Flax Seed. Good recipe, kids love it and it's pretty healthy!

    Whole Wheat Flax'N Apple Muffins

    1/4 cup Milled Flax Seed
    3/4 cup Whole Wheat Graham Flour
    3/4 cup White Flour
    1/2 cup sugar
    2 tsp baking powder
    1/2 tsp salt
    1 egg, beaten
    1 1/2 cup finely chopped apples (I use 2 cups unsweetened applesauce)
    3 Tbsp veg. oil
    1/2 cup milk
    I also sprinkle in some cinnamon.

    Blend dry ingredients in one bowl, wet ingredients in another. Add dry ingredients to wet ingredients. Fold in apples. Batter will be thick. Fill muffin cups. Bake at 400 degrees for about 20 minutes. Makes about a dozen muffins.
