    Since you are a newcomer to this gourmet dish, it is difficult to urge spending the vast sums required to sample top drawer caviar. A single ounce (28 grams) can cost upwards of $40.00 to $80.00 (29€ to 58€). Should you be prepared to spend this amount, some related information will follow at the end of this answer. The most common sources for affordable types of caviar are salmon, paddlefish, lumpfish, burbot and common whitefish. However—similar to the appellation d'origine contrôlée for Champagne—only genuine sturgeon roe may be referred to when using the single word, "caviar".
